This was intended for last weeks news. Shelia Jackson ate Thanksgiving dinner with her niece, Robbie Griffin’s at Teasdale, then Thursday night they had their familys out at Mickey and Christy’s new house. Sheila said it was so nice and it has a porch all around it. They did it on their on . Took 3 years but they did it even cutting the lumber. I received the sweetest phone call from a long time friend, Polly Woods Dogan. I found out that she was living back in Grenada. Polly has been my friend since the early sixties. After the Holidays are over, she and I will meet with another friend, Nadine Bennett of Duck Hill and catch up on our happenings since we last saw each other. I’m so looking forward to seeing these sweet girls! Momma, Jennifer Bowman, and I daughter Charlie B and son, Jack killed a deer all in the same week. I hope they have a big freezer! Now Brian can sit back and enjoy having his meat for this winter. Your writer ended up in the ER in Oxford Friday with cellulitis and it has really got me down. I’ve been on strong antibiotics for four days and I have five more days to go. Say a little prayer for me. Thank you! Martha Box has been so sick with Type A flu. Wish I felt as good today as I felt yesterday! Tuff day today, (Sunday.) But you know how a turn row can be. Looks real easy as you get closer to it the weeds get tuffer. What grands used to say, I know for a fact now. This has been one long rough ride. Had the flu in 77, up and over in 3 days . This past 7 days Type A about whooped me. Happy belated birthday to Patrick and Peyton McMillan, twins, who celebrated the 3rd, and to their sweet sister, Presley McMillan, who celebrated her birthday December 4, Happy birthday to daughter, Brandy Rounsaville on the 11th and Jolee Robinson celebrates the 11th, Lillian Standridge and Missy Burney on the 12th, Loretta Jackson, Sandy Sturdivant and Margareta Dotson celebrate the 13th, Lee Jackson and Myra Dempsey on the 14th, Paul Craig and Allene Sullivan celebrate on the 17th. Recipe for the week: “Creamy Mushroom Chicken and Wild Rice Soup” Ingredients: 2 tablespoons butter 1 pound mushrooms, sliced 1 tablespoon butter 1 onion, diced 2 carrots, diced 2 stalks celery, diced 2 cloves garlic, chopped 1 teaspoon thyme, chopped 6 cups chicken broth 1 cup wild rice (or a blend of rice including wild rice) 1 1/2 cups chicken, cooked and diced or shredded 1 cup milk or cream 1 cup parmesan grated salt and pepper to taste directions 1. Melt the butter in a pan over medium-high heat, add the mushrooms and cook until the mushrooms have released their liquids and the liquid has evaporated, about 10-15 minutes, before setting aside. 2. Melt the butter in the pan, add the onions, carrots and celery and cook until tender, about 8-10 minutes. 3. Mix in the garlic and thyme and cook until fragrant, about a minute. 4. Add the broth, rice, chicken and mushrooms, bring to a boil, reduce the heat and simmer, covered, until the rice is tender, about 20-30 minutes. 5. Mix in the milk and cheese and cook until the cheese has melted, before seasoning with salt and pepper to taste. Thought for the day……Do one thing every day that makes you happy!
