Recipe for the week: “Pineapple Christmas Balls” 1 (8-ounce) can crushed pineapple, drained 1 (8-ounce) package cream cheese, softened 1/2 cup powdered sugar 1 1/2 cups sweetened shredded coconut (plus extra for rolling) 1/4 teaspoon vanilla extract 1/4 cup chopped walnuts or pecans, add if you like. Drain the crushed pineapple thoroughly. In a large bowl, beat the softened cream cheese with the powdered sugar until smooth and well combined. Stir in the well drained pineapple, shredded coconut, and vanilla extract. If you’d like to add some nuts, mix them in at this stage as well. Once the mixture is well combined, use your hands or a spoon to shape the mixture into small balls, about 1 inch in diameter. Roll each ball in the extra shredded coconut to coat them completely. Place the balls on a tray lined with parchment paper and refrigerate for at least 1 hour, or until firm. Serve chilled and enjoy! Thought for the day…When life shuts a door, open it again. That’s how a door works.
